Spinach and Cheese Wholemeal Pancakes
These delicious savoury pancakes are quick to make and taste great. They are a fantastic way of serving spinach to your toddler.

These pancakes taste good hot or cold, so are great to pack in lunch boxes as well.

Ingredients

  • 1/2 cup spinach, chopped
  • 1/2 cup cheese, grated
  • 1/2 cup milk
  • 1/2 cup wholemeal self raising flour
  • 1 egg, whisked

Method

Mix milk and egg together in a mixing bowl.

Add flour and mix until a smooth batter is formed.

Add cheese and spinach, mix to combine.

Heat a little butter or olive oil in a frying pan, medium heat.

Add spoonfuls of batter to the pan to make pancake shapes.

Cook until golden brown underneath, and craters are forming in the top of the pancakes.

Flip and cook the other side until golden brown.

Remove from pan, let cool for a few minutes before serving.
