Banana Chia Loaf
This basic banana bread is loaded with the goodness of chia seeds and has a terrific dense texture. <div><br /> </div> <div>The thing I love about banana bread (aside from how awesome it tastes and how mega-easy it is to make) is that if you cut it up into slices and store them in the freezer, you have an ultimate grab-and-go snack for your toddler. If we are going to be out for a while i will grab a couple of slices out of the freezer to bring in the car or pram, and by the time the little man gets hungry they have usually thawed out nicely.&nbsp; <div><br /> </div> <div>If you are at home, just grab out a slice and give it a quick zap in the microwave. It tastes great when it's warm with a bit of butter!</div></div>

Ingredients

  • 1 banana
  • 1 egg, lightly whisked
  • 1 tbsp chia seeds
  • 1/4 cup milk
  • 1/4 cup self raising wholemeal flour
  • 1/4 tsp vanilla extract

Method

Preheat oven to 180 C (355 F) and line a loaf tin with baking paper.

Mash banana in a mixing bowl.

Add egg and milk, mix with a whisk or a fork until well combined.

Add flour, mix until it becomes a smooth batter.

Add vanilla and chia seeds and stir through.

Pour into prepared loaf tin and smooth out the top.

Bake for approximately 30-35 minutes, until golden on top and a toothpick inserted into the center comes out clean.
