Spinach and Cheese Mini Muffins
These delicious savory mini muffins are great to have with breakfast. They are packed with eggs and spinach and will give your little ones a nutritious start to their day. They also make an excellent toddler snack, providing your little ones with a protein and iron boost.

They are easy to make and have just four ingredients!

Ingredients

  • 1 cup spinach leaves, chopped
  • 3 eggs, lightly whisked
  • 1/2 cup cheese, grated
  • 1/4 cup self raising flour

Method

Preheat oven to 200 C (390 F) and line a mini muffin tray with paper muffin cups.

Mix eggs and flour together in a mixing bowl.

Add spinach and half of the cheese (so 1/4 cup) and mix to combine.

Spoon the mixture into the prepared muffin tray, filling each cup about 3/4 full.

Sprinkle the remaining 1/4 cup of cheese on the top of the muffins.

Bake for 12-14 minutes, or until golden on top.

Makes 12-18 (depending on the size of your mini muffin tray cavities).
