Cheesy Chickpea Burgers

Cheesy Chickpea Burgers
These cheesy chickpea burgers are a fantastic alternative to beef or chicken burgers. They are crunchy on the outside, smooth in the middle, and they just taste amazing.

They contain a sneaky serving of carrot and zucchini as well, great for fussy little eaters!

Ingredients

  • 1 400 g can chickpeas (drained and rinsed)
  • 1/2 cup grated cheese
  • 1/2 medium sized zucchini
  • 1 medium sized carrot
  • 1 onion
  • 2 eggs
  • 1 cup plain flour
  • Butter or olive oil for frying

Method

Peel carrot and onion.

Roughly chop carrot, onion and zucchini.

Place chopped vegetables into a food processor. Add cheese and chickpeas. Process until evenly chopped and the mixture resembles a rough paste.

Add eggs and pulse to combine.

Add flour and process until well combined. You may need to stop and use a spoon to push mixture down from the edges periodically until it's properly mixed.

Heat a little butter or olive oil in a frying pan over medium heat.

Drop spoonfuls of the mixture into the pan and gently press flat with a spoon or spatula to make them about 1cm thick. You may need to dust the spoon or spatula with a bit of flour to prevent it from sticking. Try to make them about the size of regular burgers and keep them evenly spaced.

Fry for a few minutes each side until they are golden brown.

Remove from pan and allow to cool for a few moments before serving.

Makes about 12 regular sized burgers.
