Honey Nut Cheerio Cookies
Cheerios! These crunchy little O's are more than just a cereal. You can eat them with milk (booooring), eat them mixed with dried fruit as a snack, crush them and use them to make Crunchy Banana Bites, mix them up with peanut butter and honey to make Three Ingredient Cheerio Bites, or you can bake them into cookies!! Cheerio treats are a big hit at our house, and these delicious healthy cheerio cookies are a great option for these awesome little O's.

They are sweetened using banana and honey and when they cook up they have a little bit of crunch on the outside with nice bits of chewy cheerios in the middle.

They only take about 5 minutes to prepare and then 10 minutes in the oven, so these are the perfect easy cookie to whip up in a hurry.

Ingredients

  • 1 banana
  • 1/8 cup honey
  • 1/4 cup peanut butter
  • 1 egg
  • 1/2 cup self raising flour
  • 2 cups cheerios

Method

Preheat oven to 180 C (355 F) and line a large baking tray with baking paper.

Mash banana, honey and peanut butter together in a large bowl.

Add egg and whisk to combine.

Add self raising flour and mix until smooth.

Add cheerios one cup at a time, mixing until all the cheerios are coated in the cookie mixture.

Drop small spoonfuls of the mixture onto the prepared baking tray, evenly spaced. Gently press down to flatten slightly.

Bake for 8 - 10 minutes, or until the cookies are just starting to turn golden brown.

Let them cool for 5 minutes before removing from tray.

Makes approximately 30.

Store in the fridge for 3 - 4 days in an air tight container, or freeze in a freezer safe container.
