Preheat oven to 200 C (390 F) and line a baking tray with baking paper.
Use a fork to mash banana in a large bowl.
Add egg and honey and whisk until combined with the banana.
Add chia seeds and mix.
Add cornflour and mix through.
Add cornflakes and mix until well combined.
Drop spoonfuls of the mixture onto the prepared baking tray, evenly spaced.
Bake 8 - 10 minutes, until firm.
Let them cool for a few minutes before removing from the tray.
