Cheesy Mushroom and Zucchini Pasta
I was trying to think of something different to make for my boys for lunch today, and the little guys asked for noodles. According to them, any type of pasta is called "noodles", so I started thinking up new easy pasta recipes for kids.

I sent my four year old to the fridge to grab out some veggies and he came back with a zucchini and a mushroom - a pretty good combo, I thought. I realized we didn't have much to make a sauce, but we did have greek yoghurt and cheese which I figured would probably work just fine.

This pasta recipe for toddlers turned out really well and the kids ate it all up pretty quick! Mr. Two didn't even notice all the grated up zucchini and mushroom through the sauce, which is always a bonus when coming up with successful, healthy kids pasta recipes. We will definitely be making this tasty kids pasta again.

Ingredients

  • 1 cup uncooked pasta
  • 1/2 cup zucchini, grated
  • 1/2 cup mushroom, grated
  • 1/2 cup cheese, grated
  • 2 tbsp greek yoghurt (or double cream would work as well)
  • Butter or olive oil for frying

Method

Cook pasta according to packet instructions.

When pasta is almost cooked, heat a little butter or olive oil in a frying pan over medium heat. Add grated mushroom and zucchini together to the frying pan and fry for a minute or two until tender, using a spatula to stir occasionally.

Strain cooked pasta and add pasta to the frying pan with the vegetables.

Add greek yoghurt (or double cream if you're using that instead) and stir to coat the pasta.

Add grated cheese and stir until it starts to melt through.

Serve.

Makes 3 toddler-sized servings, 2 kid-sized servings, or 1 adult-sized serving.
