Butternut Creamed Rice
This Butternut Creamed Rice is so simple and the little ones love the combo of creamy rice and sweet butternut pumpkin.


  • 1/4 cup rice
  • 1 1/2 cups milk of your choice
  • 1/2 cup grated butternut pumpkin


Combine all ingredients in a pot and bring to the boil while stirring.

Reduce to a simmer, stirring occasionally to keep the rice from sticking.

Cook for about half an hour, or until sauce has thickened and rice is super soft.

If the sauce reduces too much before the rice cooks, add a little more milk as needed.


  • Pumpkin is one of the best-known sources of the antioxidant beta-carotene. Mashed pumpkin can be used as a substitute for butter or oil in baking recipes.
