Veggie Pancakes
A delicious, healthy snack the whole family will enjoy!


  • 1/2 cup cauliflower, finely grated
  • 1/2 cup zucchini, finely grated
  • 1 small potato, finely grated
  • 1/2 cup cheese, finely grated
  • 1/2 rasher of bacon, finely chopped
  • 1 small garlic clove, minced
  • 2 eggs


Squeeze excess moisture out of zucchini and potato.

Put cauliflower, zucchini, potato, cheese, garlic and bacon into a bowl and mix until well combined.

Add lightly whisked egg and mix well.

Heat a bit of butter in a frying pan and then spoon in spoonfuls of the mixture.

Flatten them and shape into rough circles.

Fry on low - med heat, flipping when the bottom turns golden brown.

Once both sides are browned, remove and let cool for a few moments.


  • A zucchini contains more potassium than a banana.
