Broccoli and Cheese Wholemeal Biscuits
My two year old has recently denounced all vegetables except for peas and corn (which he will only eat frozen...he knows what he wants in life). He still always cops a plate full of vegetables with dinner every night, but for now he is just not interested. Biscuits though, he loves biscuits... And so these broccoli and cheese wholemeal biscuits were born!

Ingredients

  • 1 cup broccoli, chopped very finely.
  • 1 cup cheese, finely grated
  • 1 cup wholemeal self raising flour
  • 1 egg
  • 1 tbsp milk

Method

Preheat oven to 180 C (355 F) and line a baking tray with baking paper.

Cook chopped broccoli in boiling water for a few minutes, until soft. Strain in a sieve so you don't lose any little bits down the sink. Let cool for a few minutes.

In a mixing bowl combine broccoli, cheese and flour.

Whisk egg and milk together, add to mixing bowl and mix until well combined.

Place dough on a lightly floured surface and roll flat with a rolling pin (dust rolling pin with flour to keep it from sticking).

Cut out circles with a small cookie cutter.

Place circles on baking tray, evenly spaced.

Bake for 10-12 mins.
