Mandarin Coconut Drops
These three ingredient biscuits are sweetened with mandarin juice and taste amazing! They are gluten free, dairy free, and very simple to make.


  • 1/4 cup mandarin juice (I used one large mandarin)
  • 1/2 cup desiccated coconut
  • 2 egg whites


Preheat oven to 200 C (390 F) and line a baking tray with baking paper.

Mix all ingredients together in a bowl. If the mixture seems a little runny, just add a little more coconut.

Drop spoonfuls of the mixture onto prepared baking tray, evenly spaced.

Bake for 18 - 20 mins, until golden on top.
