Avocado Banana Muffins

Avocado Banana Muffins
These delicious muffins are sweetened by banana and loaded with the goodness of avocado!

They are incredibly moist and flavour-packed. They freeze well, but they taste so good that your toddler will probably eat them all up before you can get them in the freezer.

Ingredients

  • 1 ripe avocado
  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup milk
  • 2 cups wholemeal flour
  • 1 tsp baking soda

Method

Preheat oven to 190 C (375 F) and brush 2 muffin trays with butter or olive oil

Mash bananas and avocado together in a bowl

Mix in lightly beaten eggs and milk

Mix in flour and baking soda until well combined

Spoon tablespoon sized amounts of the mixture into prepared muffin trays

Bake for 15 minutes

Makes 24


DID YOU KNOW...

  • Most of the nutrients in an avocado are concentrated in the dark green flesh closest to the peel. By scooping the flesh out of an avocado, most of this highly nutritious flesh is left behind. The best way to ensure you aren't losing the best part of the avocado is to gently peel the skin off rather than scoop it out. Cut your avocado in half lengthways so they are held together by the pit, then gently twist to separate the two halves. Cut each half again so you have quarters, then gently peel the skin back from the flesh like you would a banana.
  • Bananas are a fantastic ingredient in toddler cooking, as they are a healthy way of sweetening any recipe without adding refined sugar. Mashed banana can also be used in place of butter or oil to keep cakes and muffins moist.

Hi Susan :) The riper your bananas are, the sweeter these muffins will be. You can also add a spoonful of honey to the recipe to sweeten it further.
