Apple Carrot Pancakes
These gorgeous golden pancakes are quick to make and taste delicious! They are sweetened by apple and have some sneaky carrots tossed in as well.

Preparing them is no trouble, all you need to do is finely grate up the raw carrot and apple and mix it straight into the batter.

Try these delicious apple carrot pancakes out for an easy and healthy kids breakfast.

Ingredients

  • 1/2 cup carrot, finely grated
  • 1/2 cup apple, peeled and finely grated
  • 1 cup self raising flour
  • 1 cup milk
  • 1 large egg, whisked

Method

Whisk flour, milk and egg together in a mixing bowl until it becomes a smooth batter.

Add grated apple and carrot, mix to combine.

Heat some butter in a frying pan, medium heat, and add the batter to the pan using a large spoon.

Cook until golden brown underneath and the top is just starting to set.

Flip pancakes and allow other side to brown. Once both sides are golden brown, remove from pan.

Allow to cool for a few minutes and serve.
