Five Veg, Bacon and Sesame Couscous
Couscous is a brilliant pasta option for toddler meals, as it is so quick and easy to prepare. This simple couscous dish is packed with vegetables and is ready to eat in less than 10 minutes. It will make a great healthy lunch or dinner for your toddler.

Ingredients

  • 1 tbsp broccoli, chopped finely
  • 1 tbsp carrot, chopped finely
  • 1 tbsp zucchini, chopped finely
  • 1 tbsp peas
  • 1 tbsp corn
  • 1 tbsp bacon, chopped finely
  • 1/4 cup uncooked couscous
  • 1/2 tsp sesame oil

Method

Finely chop vegetables and bacon so they are all about the same size.

Heat a little butter or olive oil in a frying pan on low-medium heat, and lightly fry vegetables and bacon until vegetables soften and bacon starts to crisp.

Meanwhile, prepare couscous according to packet instructions (usually just add hot water and let sit for a few minutes).

Once vegetables and bacon are ready, add sesame oil and mix through.

Remove from heat and mix vegetables, bacon and couscous together in a bowl.

Leave to cool for a few minutes and serve.
