Preheat oven to 180 C (355 F) and line a large baking tray with baking paper.
Spread almonds out in a single layer on the baking tray.
Roast for about 10 minutes. You will know when they are ready, because they will smell amazing! Roasting the almonds will give your almond butter much more flavour.
Remove from oven and set aside to cool for a couple of minutes.
Put roasted almonds into your food processor and turn on high.
It can take anywhere between 5 - 15 minutes for the almonds to turn into almond butter, depending on the speed of your food processor and the type of blade you are using.
The almonds will grind down into chunks then into very fine pieces. Keep at it, it will soon start to become smooth and creamy.
Once your almond butter has become nice and smooth, remove and put it in an airtight container. Store in the fridge for 3-4 weeks.
