Put all ingredients together in a food processor and process on high until all ingredients are mushed up together.
Try and squish some of the mixture together with your fingers - it should hold together easily. If it crumbles apart, add a couple more apricots or dates.
Line a loaf tin with baking paper and put the apricot mixture in. Spread it out evenly in the base of the tin.
Cover it with baking paper and use your hand to press the mixture down firmly and evenly. It should end up a cm thick or less.
Chill in the fridge for about an hour, then cut into bars or squares.
