Peanut Butter and Jelly Cucumber Bites
There aren't many greater flavor combos than peanut butter and jam! My two year old would eat it all day if I let him. He will eat it on toast, in a bowl with a spoon, on banana slices, on celery sticks... and on cucumber slices, as it turns out!

These mini cucumber bites are a delicious crunchy snack that are packed with flavor. The cucumber makes a great alternative to bread or biscuits for those who have issues with eating gluten.

You can use any kind of nut butter and jam, including this easy home made almond butter and this unbelievably simple berry chia jam.

Ingredients

  • Cucumber slices
  • Peanut butter
  • Jam

Method

Cut cucumber into slices - as many as you like, but make it an even number so each cucumber bite has a top and bottom piece.

Gently wipe half of the slices dry with a paper towel. This will make it easier to spread the peanut butter on to them.

Spread the dried slices with a bit of peanut butter, then add a bit of jam on top.

Top each one with the remaining cucumber slices, and gently press down so they stick together.
