Mild Chicken Curry

Mild Chicken Curry
This very mild curry is a great one for toddlers who aren't used to spicy foods. 

Ingredients

  • 1/2 cup diced chicken breast
  • 1/4 cup grated zucchini
  • 1/4 cup grated pumpkin
  • 1 1/2 tbsp thickened cream
  • pinch of curry powder
  • pinch of cumin

Method

Fry chicken breast in olive oil until browned and cooked through. Remove from pan and set aside.

On low heat, saute zucchini and pumpkin until tender.

Return chicken to pan and add cream, curry powder and cumin.

Cook on low heat for a few minutes until cream thickens.

Try the sauce, and if you feel it is too mild then you can add more cumin and curry. If you feel it's a bit too hot for your toddler then just add a little more cream.

Hiya,
I'm wondering if you could suggest a good substitute for pumpkin? I don't think they sell them all year round in Scotland?!
I'm having a week of all your recipes next week so trying to plan!
