Zucchini Wholemeal Pizza Scrolls
These easy pizza scrolls are a fantastic toddler breakfast, lunch or snack. The dough is very simple to make and uses greek yoghurt, and the filling is a delicious combo of bacon, zucchini and cheese.

Ingredients

  • 1 cup wholemeal flour
  • 1/4 tsp baking soda
  • 1/2 cup greek yoghurt
  • 1/2 rasher bacon, finely chopped
  • 1/4 cup grated zucchini
  • 1/2 cup grated cheese
  • 1 tbsp tomato paste

Method

Preheat oven to 210 C (410 F) and line a baking tray with baking paper.

Mix flour and baking soda together. Add greek yoghurt and form into a dough.

Use a rolling pin to roll dough out on a lightly floured surface until it is roughly square shaped and about half a cm thick. Cut edges straight with a knife.

Thinly spread entire surface with tomato paste, then sprinkle evenly with bacon, zucchini and cheese.

Tightly roll into a log shape and gently press the outer edge into the rest so it sticks closed.

Gently cut into 1cm thick scrolls

Lay flat on prepared baking tray and bake for approx 22 mins.
