Ingredients

  • 1 carrot, peeled
  • 1/2 tablespoon olive oil

Method

Preheat oven to 200 C (390 F) and line a baking tray with baking paper.

Use a vegetable peeler to peel the carrot. Discard the peel.

Using the peeler, peel longways along the carrot to get long, thin slices of carrot. Keep going until the whole carrot is peeled into thin slices.

Cut the slices into roughly 1 inch pieces.

Toss carrot pieces in olive oil to coat.

Spread carrot pieces evenly on baking tray. Bake for approximately 12 minutes, or until the edges are starting to curl and darken.
