Sweet Mandarin Couscous

This healthy toddler couscous was a huge hit with Mr. Two! It uses only three basic ingredients and it takes just minutes to put together.

Ingredients

  • 1/4 cup uncooked couscous
  • 1 mandarin
  • 1/2 tbsp sultanas, chopped

Method

Bring 1/4 cup of water to the boil then remove from heat. Add couscous and mix well. Cover and let sit for 2-3 minutes.

Roughly chop up sultanas.

Peel mandarin and divide into halves. Take one half and chop each segment into 3 parts.

Once couscous has absorbed the water and is soft, mix through the sultanas and mandarin pieces.

Take the remaining mandarin half and squeeze the juice into the couscous.

Mix and serve.

  • Sultanas are a fantastic way of sweetening recipes without adding refined sugar, and toddlers love to snack on them. However, please be aware that they are extremely high in sugar and can cause tooth decay. Their sticky texture causes them to stick in your child's teeth and cause damage until their teeth are cleaned properly. Try not to offer your toddler dried fruits too often, and make sure you clean their teeth regularly.
