Chicken and Corn Couscous
A great way to use some leftover chicken, and is ready in just a few minutes.


  • 1/4 cup couscous
  • 1/4 cup leftover chicken, finely chopped
  • 2 tbsp corn kernels, cooked
  • 1 tbsp finely grated cheese
  • 1 tsp olive oil


Bring 1/4 cup of water to the boil then remove from heat. Add couscous and mix well. Cover and let sit for 2-3 minutes.

Meanwhile, heat chicken and cook corn in boiling water.

Once couscous has absorbed the water and is soft, mix in about half a tsp of olive oil.

Add corn, chicken and cheese to couscous and mix to combine.


  • Chicken is a fantastic source of lean, low fat protein, which is great for the muscle growth and development of your toddler.
