Baked Melon Drops
My two year old is obsessed with melon! Usually if I buy any kind of melon, he's asking to have it for breakfast, lunch and tea until the entire thing is gone.

For some reason he was a little less fanatic this time around, and for the first time ever I found myself left with a whole bunch of rockmelon in the fridge that didn't have much life left in it. No point wasting it, I thought I'd see what would happen if I pureed it and baked it into something quick and easy.

These little cake drops are made with just three ingredients! This batch was made using rockmelon, but you could use any kind of melon you like. 

Ingredients

  • 1 cup pureed melon
  • 1 egg
  • 1 1/2 cups self raising flour

Method

Preheat oven to 200 C (390 F) and line a baking tray with baking paper.

Puree melon to get 1 cup (I used about 1/3 of a melon).

Mix melon puree and egg together in a bowl.

Add flour and mix until combined.

Drop tablespoon amounts of the mixture onto the prepared baking tray, evenly spaced.

Bake for about 12 minutes, until top just starts to brown.
