Bacon and Veggie Basic Breakfast Loaf
This simple breakfast loaf is packed full of flavour and has a sneaky serving of vegetables for your toddler. Save time in the mornings by freezing this in slices, then simply reheat as you need them for an easy and healthy toddler breakfast.

Ingredients

  • 1/2 cup zucchini, finely grated
  • 1/2 cup carrot, finely grated
  • 3/4 cup of cheese, finely grated
  • 1 rasher of bacon, finely chopped
  • 3 eggs
  • 1/2 cup wholemeal self raising flour

Method

Preheat oven to 220 C (430 F) and line a loaf tin with baking paper.

Heat a little butter in a frying pan and fry bacon, zucchini and carrot on medium heat for about 5 minutes, until just starting to brown.

Put bacon and vegetables in the fridge to cool.

Once bacon and vegetables are fairly cool, put them in a bowl with eggs and 1/2 cup of the cheese and mix together.

Add flour and mix until combined.

Pour into prepared loaf tin and use a spoon or spatula to smooth out the top.

Evenly sprinkle the remaining 1/4 cup of cheese over the top.

Bake for approximately 22 minutes or until firm and golden.
