Banana Coconut Pancakes
These amazing three ingredient pancakes are gluten free, dairy free and taste great! They take minutes to make, so whip your toddler up a quick batch of them for breakfast or even for a healthy snack through the day.



Mash banana.

Whisk egg into the banana.

Add coconut and mix to combine.

Heat a little butter or olive oil in a frying pan (low heat).

Add spoonfuls of the batter into the pan to make 3 - 4 pancakes.

Cook until bottom is golden brown, then flip and brown the other side as well.

Let cool for a few minutes and serve.


  • Bananas are a fantastic ingredient in toddler cooking, as they are a healthy way of sweetening any recipe without adding refined sugar. Mashed banana can also be used in place of butter or oil to keep cakes and muffins moist.
