Healthy Baked Beans
This healthy baked beans recipe is very easy to make, toddler friendly and tastes delicious.

Once you try making your own healthy baked beans at home you probably won't want to go back to the canned version - home made baked beans really are so much better!

Ingredients

  • 1 small onion, finely diced
  • 1 small carrot, grated
  • 1 clove garlic, finely diced
  • 1 400g tin cannellini beans (or navy beans)
  • 1 tsp apple cider vinegar
  • 1 1/4 cups passata (tomato puree)
  • 1/4 cup water

Method

Strain liquid from beans and rinse under cold water.

Heat a little butter or olive oil in a frying pan on low - medium heat.

Fry onions for a few minutes, then add carrot and garlic and fry until cooked (about 3-5 minutes)

Add apple cider vinegar and cook for about a minute.

Add beans, tomato puree and water. Stir to combine.

Simmer for another 5 - 10 minutes, until sauce has reduced and beans are tender.
