Banana Chia Loaf

Banana Chia Loaf
This basic banana bread is loaded with the goodness of chia seeds and has a terrific dense texture.

The thing I love about banana bread (aside from how awesome it tastes and how mega-easy it is to make) is that if you cut it up into slices and store them in the freezer, you have an ultimate grab-and-go snack for your toddler. If we are going to be out for a while i will grab a couple of slices out of the freezer to bring in the car or pram, and by the time the little man gets hungry they have usually thawed out nicely. 

If you are at home, just grab out a slice and give it a quick zap in the microwave. It tastes great when it's warm with a bit of butter!

Ingredients

  • 1 banana
  • 1 egg, lightly whisked
  • 1 tbsp chia seeds
  • 1/4 cup milk
  • 1/4 cup self raising wholemeal flour
  • 1/4 tsp vanilla extract

Method

Preheat oven to 180 C (355 F) and line a loaf tin with baking paper.

Mash banana in a mixing bowl.

Add egg and milk, mix with a whisk or a fork until well combined.

Add flour, mix until it becomes a smooth batter.

Add vanilla and chia seeds and stir through.

Pour into prepared loaf tin and smooth out the top.

Bake for approximately 30-35 minutes, until golden on top and a toothpick inserted into the center comes out clean.
