Easy Green Toddler Salad
Today my son actually asked me to make him a salad! With a silent "woohoo" I looked through the fridge to see what sort of salad bits I could throw together for him, and this recipe is what we came up with. 

Mr. Toddler helped to mix it all up as I was adding the ingredients, and he even ate the whole thing!

After seeing him refuse leafy greens for so long, to reach a point where he is requesting and eating a salad containing spinach leaves seems just remarkable. All I can think about is how quickly he is growing up! He will be three years old in a couple of months. How did that happen?!

This salad is tasty and very easy to make. It contains a quarter cup of each ingredient, then has a little bit of whole egg mayo mixed through. It got the tick of approval from my previously anti-salad son, so it may be worth a try with your little ones too.

Ingredients

  • 1/4 cup ham, cut into small pieces
  • 1/4 cup cucumber, diced
  • 1/4 cup cabbage, shredded finely
  • 1/4 cup cheese, grated
  • 1/4 cup spinach leaves, roughly chopped
  • 2 tsp whole egg mayonnaise

Method

Chop, shred and grate all ingredients, then mix together in a bowl.

Add mayonnaise and toss to coat.
