Preheat oven to 220 C (430 F) and brush a mini muffin tray with butter or olive oil
Use a small cookie cutter (about 5-6 cm diameter) to cut out circles of puff pastry and gently press them into the muffin tray.
Finely grate the flesh of the apples into a bowl. Be careful to avoid grating the core and stem.
Mix the cinnamon in with the apple.
Place teaspoons of the apple mixture into the pastry circles and gently spread it out evenly.
Bake for 10-12 minutes or until puffed and golden.
