Chicken Parmigiana Muffins
These delicious savoury snacks are like little parmas in muffin form. They smell amazing in the oven! Your toddler with love these with a simple dipping sauce of pureed tomato.


  • 1 cup cooked chicken, finely chopped
  • 1/2 cup ham, finely chopped
  • 1/2 cup cheese, grated (plus a little extra to go on top)
  • 1/2 cup breadcrumbs
  • 3 eggs, lightly beaten


Preheat oven to 200 C (390 F) and brush a mini muffin tray with butter or olive oil.

Combine chicken, ham, cheese and breadcrumbs in a bowl.

Add eggs and mix well.

Fill all the cups evenly in the muffin tray with the mixture, then top with a little grated cheese.

Bake for 20-24 minutes or until golden.
