Egg and Bacon Couscous


  • 1/2 rasher of bacon, diced
  • 1 egg
  • 2 heaped tbsp finely grated carrot
  • 1/4 cup couscous
  • olive oil


Bring 1/4 cup of water to the boil then remove from heat. Add couscous and mix well. Cover and let sit for 2-3 minutes.

Fry bacon in olive oil until just starting to brown. Add grated carrot and cook for another minute or so.

Remove bacon and carrot from pan, and use pan to scramble egg.

Once couscous has absorbed the water and is soft, mix in about half a tsp of olive oil.

Add bacon, carrot and egg to couscous and mix to combine.
