Preheat oven to 210 C (410 F) and brush a baking tray with olive oil or butter.
Cut chicken into strips about 1 cm thick and 2 inches long.
Set out one bowl containing the flour, one bowl containing the egg, and one bowl containing the breadcrumbs and parmesan mixed together.
Coat chicken strips in flour, then egg, then breadcrumbs/parmesan.
Place on prepared baking tray, evenly spaced.
Drizzle a little olive oil over them.
Bake for about 16 mins, turning once halfway through, until chicken is cooked and the outside is crispy.
