Banana Berry Buttons

Banana Berry Buttons
Try out these cute little baked Banana Berry Buttons for your toddler. There's just something about the banana berry combo that works a treat! While these are still warm the berry is a bit sour, but they sweeten as they cool down.

These freeze well, just wrap them in plastic wrap in lots of 2 or 3 (however many you would use at a time) and seal them all in a freezer bag or container. Defrost in a microwave or oven.

Makes about 36.

Ingredients

  • 1 egg
  • 1 small banana
  • 1/2 cup milk
  • 1/2 cup wholemeal self raising flour
  • 3/4 cup mixed berries

Method

Preheat oven to 180 C (350 F) and brush a muffin tray with olive oil or butter.

Mash banana and add milk and egg, whisking until well combined.

Slowly add flour while mixing until well combined.

Spoon small amounts into the muffin tray cavities, enough to make a layer almost a cm thick.

Put 3 berries in each one.

Bake for 12 mins, or until a toothpick inserted into them comes out clean.

DID YOU KNOW...

  • Bananas are a fantastic ingredient in toddler cooking, as they are a healthy way of sweetening any recipe without adding refined sugar. Mashed banana can also be used in place of butter or oil to keep cakes and muffins moist.
