Apple Cinnamon Mini Muffins
These tasty muffins are very simple, just grate up some apple and mix it straight into the batter!

Apple and cinnamon is a delicious combination, and these little muffins are also made with greek yoghurt instead of milk for an extra calcium boost.

Try them out for an easy, healthy snack for your kids.

Ingredients

  • 1 large apple, peeled and grated finely
  • 1 cup wholemeal flour
  • 1/4 tsp baking soda
  • 1/2 cup greek yoghurt
  • 1 egg
  • 1/2 tsp cinnamon

Method

Preheat oven to 190 C (375 F) and line a mini muffin tin with paper muffin cases.

Mix flour, baking soda and cinnamon together.

Add egg and yoghurt, mix well.

Add apple and mix to combine.

Divide evenly among 12 paper muffin cases. They should be about 3/4 full.

Bake for approx 20 mins.
