The sneakiest veggie for fussy kids - 13 zucchini toddler recipes

Zucchini is GREAT for toddler recipes! It has a mild (almost non-existent) flavour, it's mostly colourless, and it's so easy to sneak into almost any kids recipes without compromising the taste.

As well as being a crazy-awesome ninja vegetable that your kids won't even know is hiding in their muffins, Zucchini is also a great source of dietary fiber, vitamin C, vitamin K, vitamin B6, folate, magnesium and potassium, and is naturally low in cholesterol, saturated fat and sodium.

I find that the best way to add zucchini to a toddler recipe is to grate it up nice and small. When you cook these itty bitty zucchini slivers they basically mush away to nothingness, so your kids won't even know it's there!

The following list offers some great examples of easy, healthy recipes for kids that use zucchini. Some of these examples have the zucchini grated up a bit larger - if you want it to be basically invisible then simply use the finest part of the grater to grate it up nice and small.

1. This easy 5 ingredient Banana, Zucchini and Walnut Loaf is packed with banana, greek yoghurt, walnuts and zucchini. It tastes delicious and is also egg free.



2. These gorgeous Mini Zucchini Quiches don't even need an introduction, just look at them! They're packed with zucchini, carrot and cheese and are perfectly bite sized.



3. Pizza toast! Like pizza, but toast! Plus it's loaded with vegetables under all that bacon and cheese. This one always goes well with my kids.



4. This delicious savory Breakfast Loaf is absolutely packed with veggies, plus has tasty hokkien noodles baked in as well. Cut this into slices and freeze them individually so you can reheat as you need them for an easy, healthy, no fuss toddler breakfast.



5. These crispy, golden Parmesan Zucchini Crisps are a great way to serve zucchini to your kids. All you need to make these healthy kids snacks is zucchini, parmesan cheese and an oven.




6. They're called Broccoli Burgers, but these tasty little veggie burgers are also loaded with zucchini and carrot. They're easy to make and taste great!



7. These easy Zucchini Wholemeal Pizza Scrolls are loaded with bacon, zucchini and cheese. The dough is made using greek yoghurt and is amazingly simple to make.

It has zucchini and pumpkin grated into the sauce! If you want to hide the green zucchini more, simply grate it up smaller - the zucchini in this image was grated on the larger holes of a grater, so is a lot more visible.



9. Four ingredient Zucchini Puffs are a great pastry recipe for kids. They're loaded with vegetables and lots of flavour.



10. You seriously can't go wrong with these amazing Veggie Pancakes! These taste so good dipped in a bit of tomato sauce, and they're so easy to make.




11. Creamy Tuna and 3 Veg Pasta is a tasty, easy to make, healthy toddler dinner recipe. It's packed with protein and omega 3, plus has carrot and zucchini hiding in the sauce.
