Cheese is a food made from milk by coagulation of the milk protein casein. It is comprised of milk fats and proteins, usually using milk from cows, goats and sheep.

The style, texture and flavour of the milk depends on a lot of things, including origin of the milk, the animal's diet, whether or not it has been pasteurized, the mold and bacteria, ageing and processing.
